The base difference is Simple is lower effort in comparison to the Detailed models.
Usually I can make a Simple model solely in VRoid Studio without having to export it to other programs for tweaks, but it comes at the lack of custom items, textures and meshes.
EG, I cannot make tails or wings on Simple models. There is however a Simple Model Blender Export fee that buyers can pay if they really want the parts on the Simple Model.

I do actually! You add the pricing as you would if it were a normal model.
And just do not add things that would be below the waist. (tail, pants and such)
